According to Arreat Summit literature, monster immunity to elemental damage means they have 100% resistance to that element.

Presumably, monsters that are merely resistant and not immune have something less than 100%. In either case, as well as in the case of Ubers which have 110% resistance, is it not possible to synergize an elemental skill's damage so high as to over ride and defeat thier resistance to some extent?

Example: When I am fighting a cold immune monster and I am using, primarily, an exorbitant and astronomical amount of synergized cold skill damage, is the fact that I am able to eventually kill him, the result of override, or is it that portion of my total damage deriving from physical and/or other elemental damage which I might be carrying in the form of charms or on an equipped item?

When a monster is immune to elemental damage, it means that he's got a certain amount of resist over 100%, i.e. 150% or so. So the immunity is removed when you use enough -res to get him below 100%, with Conv aura, cold mastery, jewels, gear, etc. However, there are some enemies in the game that have such high resistances that they cannot be removed, I think there were a few in Chaos Sanctuary at least.

When a monster is resistant, I think he had 90% or 95% of that resistance.

And also take a note. Any resistance > 145 cannot be broken on monsters, no matter what you throw at it.
