Eh, it is impossible to make a unbeatable character because there is always someone better. A good way to start making a good character is to download Hero Editor, which you can get from this site.

If I were you I'd start by getting as much defense as you can. If you want to be able to dodge any and all attacks you might have to know some knowledge in hexing and binary code, which I have no clue about.
