I have a situation..say you have a three socketed item (armor to be more specific), and you have the runes for a 2 rune runeword (stealth, for example) Would I get the runeword if I put just those two in the armor? If I could, would I be able to use the third socket without undoing the runeword?

no, runewords only work in an item with the right amount of sockets
