Ok, I'll explain you why -%enemy's defence, or -%enemy's damage for that matter won't work well at PvP.
There are no PvP chars that I could think of at the moment (maybe Fury Druid) that would depend on raw damage, i.e. just item based damage and no auras. A barb has Beast, giving him Fanatiscm, as do all melee palas. Bowzons use Faith, all other PvPers are elemental/magical or unblockable phyical (Wind Druid).
Now, your avarage Smiter will have his damage increased by 400% by Fanatiscm (400% is a nice round number), so if you reduced his damage by 50% or so, he would only get a bonud of 350%, meaning that it's just like having lvl 25 Fana instead of lvl 27. The difference is marginal.
Same goes for reduce target's defence (ITD does not work in PvP). Any char whose defence is limited to what they are wearing (almost any char, except for pala and barb) will get hit anyway, because their defence is so low.
Now Palas have Holy Shield (%edefence) and barbs have Shout and Iron Skin (%edefence), so instead of getting i.e. +400%edefence, they will only get +350%.
Difference is minute, so if I were you, I would not really concentrate on such things.
