You sorta... aren't built for survivability. I did the same thing back when I played (for awhile), some people are against it but trading your spirit/lidless for something like a stormshield (high str reqs I know, I'd try it with an enigma and strength charms before you revamp your entire character) and getting your block up can always help your survivability. Also get your resists up if they are not maxed already, and don't forget to do the quests for extra resists. Resist charms are a good option. Back in the day I actually stopped using a MF stacked sorce for botting and went all out damage/survivability just because of the same problem your having--- and I still found great drops.
And fortitude is mostly used for the 300% ED, so do not use it on a caster.
A shako+SS+COH will give you max dr with good resist bonus. Unfortunately you have to devote alot of dex to get your block up, I wouldn't go for 75% but any bit helps.
Also energy shield can totally screw you over, try with it and without it. If your really set on using it you could try a set of frostburns over those magefists, they add alot of mana.
Also may I ask why the waterwalks? The dex bonus for wiz spike usage? I always perfered silkweaves. But this is a very minor part of the gear really.
