I am a Fighter class and in the Bloody Foothills of Act V the monsters are Death Maulers - Immune to Physical Damage.
How can I kill these mosters?

get a merc. equip it with reaper's toll. that will cast decrepify, which in turn will make whatever monster unimmune (heh i invented that)
(i think i have everything correct.. i stopped playing a long time ago)

You could also try Berserk, if you have any points in it. It'll cut through physical immunity.
